You're describing every Dave Doeren team for the past decade. The problem isn't the red zone, it's the lack of a game-breaker. We saw this in the old SWC, a team needs a LaDainian Tomlinson type who can score from anywhere. You can't just grind it out anymore. Those long drives you praise are why they stall, the defense gets set. They need explosive plays, not just a few more inches near the goal line. This reminds me of when we had Max Knake, you had to take shots. Settling for field goals is a symptom, not the disease. Their whole philosophy is the anchhor.
